This whole time I thought I was being incompetent with the stroke technique, but it looks like the trick was in controlling the paint amount.
That is my fault as well - far too much paint. Glad to know I’m not alone.
So basically just use more colors. That's really all that was shown here because you spent way less time on the first which could have been much better even using a single shade

I only have papers to paint on 🙁 Do I have to use canvases? Are they expensive? Does it feel different on canvases?
Any paper that it primed for acrylic should work. Canvas is nice to work on. You can buy it fairly cheaply.
i think watercolor paper will work 😀😀 it looks like a bond paper but a thick one HEHE
